首推煲老鸡汤。老鸡解冻,洗净斩大块,因为这种鸡个头小,我一般把腿,翅膀和鸡胸用剪刀分开就可以了。冷水注入,加新鲜姜片,料酒,一点点苹果醋,龙眼干,西洋参片若干,干香菇,大火煮开后转小火,一个小时后加红枣和枸杞,半小时后就可以吃了。
其实昨天我有点喉咙痛,下午的时候全身开始发冷,于是赶紧把应该今天煲的老鸡汤提前。晚上入睡前一个小时的时候喝了一碗鸡汤,浑身开始暖洋洋,犯困的时候就呼呼去了。今天早晨啥症状都没了,正生龙活虎:
上周某一天醒得早,突然特别馋炖全鱼。正好头天晚上在韩国店买了条收拾干净的tilapia,于是静悄悄爬起来烧了这一锅鱼,配菜是老豆腐,新鲜香菇和芹菜条(剩下的正好用了,不然就用白菜更好,可惜没买)。方子是这样的:把鱼冲净,用纸巾揩干,表面切花刀,撒盐腌十分钟。锅加热,转小火倒油,不用等油热就放鱼进去,盖好盖子再开中火煎两分钟。再转小火等没有爆锅声音了把鱼翻个(这样免得溅油,无它),如法再度炮制。然后撒入切好的葱姜蒜,喷料酒,加一勺糖,加一点苹果醋,再加入些淡味酱油烧开后加入老豆腐和香菇。如果汤太少就加一点水,根据自己的口味再酌情加点盐。这样再烧半个小时,再加些自己喜欢的配菜和葱段,就可以吃了:
这道是我最喜欢而且常做的,卤牛筋和金钱肚。这次卤的时候还加了一点点tumeric进去,现在姜黄粉是大热保健品,对免疫系统的维护很有口碑的样子。做法是店家已经给收拾干净的牛肚牛筋还是要泡水一两个小时,中间换两次水,然后沥干。牛筋先入瓦罐,加料酒,新鲜姜片,一点点苹果醋,一小勺姜黄粉,两只八角和一块桂皮,淡味酱油和适量的水,以没过食材为佳,大火烧开后转小火烧至少俩钟头,加适量盐,加牛肚,再烧一个钟头就可以吃了:
