小布这是文华酒店的辣椒酱配方

10g shallots, finely chopped,    2 tbsp vegetable oil,   2 lime,  30g fresh red chilli,   1 clove of garlic, finely chopped 

1 tsp salt,  2tbsp chicken stock

Fry shallots in 1 1/2 tbsp of oil. Turn off heat once the shallots turn light brown. In electric blender blend chilli with garlic, salt and 1/2 tbsp of oil.

Add chicken stock and lime juice. Add a pinch of salt to taste. Just before serving the sauce, add fried shallots. Mix well. Serve
