I assume you are an organic chemist. Can you please give us some answers about below:

 

1,If preseve raw duck eggs in salty water for 30 days,  the egg yolk will excude oil and turn golden hard. Is this a chemical change or physical change?

 

2, when you put a little plaster （Calcium Sulfate Hemihydrate ） into soymilk, the soymilk will turn to toufou. Is the transformation physical or chemical

I'd say the changes are physicochemical as you are not creating new bonds (or compounds) but you are changing the nature of the proteins by breaking their internal weak bonding interactions.
