There are many ways of interpreting this.
My guess would be that subconsciously, she's probably trying to hold on to the remaining days of 'freedom' before you guys officially tie the knot. That's all understandable right? And I don't think it implies that she's not ready or you guys are not ready. It's just human nature. Marriage is a life changing experience. So it takes some time to get used to even the pre-marriage part...
But then again, the reason for this may also be very plain and simple... She doesn't like having something protruding (I'm assuming it's a solitaire type) on her finger yet she doesn't have the heart to tell you... Even though she may be the person who chose it and it looks fantastic when she put it on. But it's something else wearing it 24/7.
In any case, I'd treat this as a minor detail. The important thing is that you guys love each other.
