给喜辣的朋友分享两款凉拌茄子—下饭神菜！

烧椒茄子：茄子破开蒸熟，辣椒放在热锅上干烧到表面略焦，放凉后切碎和葱花香菜青花椒一起再稍微剁剁，小碗中用酱油、醋、白糖、一点点味精调味，偏重酸甜口，然后把剁匀的烧椒葱末铺在茄子上，锅中烧热油淋上就OK。相当酸爽可口！

 

手撕茄子：茄子破开蒸熟放凉撕成条敝干水分，切葱花，蒜剁茸加少许凉水，豆瓣酱豆豉剁细，锅里倒油，油要多放些，油烧至7、8成热时下转中小火，下几粒干花椒爆香，然后放豆瓣酱翻炒出香味再放豆豉炒匀关火。稍凉盛入小碗中，加酱油、白糖、花椒油、味精、蒜水、葱花调好味后倒入茄子里开吃。鲜香麻辣！

 

两款的辣度都可以调节，夏天下粥也非常好
