鸡蛋炒扁豆丝、葱烧蹄筋

朋友给的：

摘掉筋。

这个就是紫扁豆，还不是北京的猫耳朵豆角。

这种豆角质地比较硬，切丝炒最好。

我焯水了一下，先煮软，水里加盐。

还有一个大鹅蛋，炒的鹅蛋。配一点蒜片、泡椒。

上次葱烧蹄筋，因为一大盘，所以先拨出来，跟切下来的边角一起冻起来了。

今天拿出来，再烧了一些葱段，重新加热，加煮牛筋的汤，今天加了一点甜面酱，

颜色深一些。葱我上次一转头忘了拍松。今天记得葱段拍松再煎。

这个过程盖锅盖，就不会油星嘭到炉台上了。
