今年第一次做小杨生煎（刚刚有坛亲问我要配方，刚刚加进去了）

自己做的生煎汤汁不油腻，我用骨汤加吉利丁做的冻，不加一点味精，鲜甜不口渴

 

 

 

配什么蔬菜呢？～～～双菇汤吧

 

 

一咬满嘴汤汁（每个约有1.5大勺的汁）

首先选蛋白质含量8％～11％的面粉，否则太硬，以下两款可以

400克面粉、200克冷水、1小勺无铝泡打粉、一小勺盐、1.5大勺油揉到三光，保鲜膜封好静止15分钟

馅料：骨汤高汤、盐、吉利丁做成皮冻（皮冻：肉馅=1:2）

400克后腿肉米、70克葱姜水、一小勺酒、一小勺盐、一小勺老抽、一小勺糖、一小勺麻油、白胡椒粉1/4小勺，打上劲后静止一小时以上或过夜。

半碗油煎到底黄，加水～～9分钟后倒出所有液体，上下左右移动锅底，到金黄即可
