没啥可追求的啦～

昨天做了四拼腊味煲仔饭，放了四种食材，自制腊肉和自制广式腊肠以及买的五香腊肠和法式烟熏肠。

最后的结果是蓝婆婆自制腊肉的口感最佳，完胜。

Montbéliard是法国的一个地名，位于Franche-comté大区，这里出产的烟熏肉肠被认为是法国的一种传统美味食品。

我选的这款获得铜牌奖的Montbéliard烟熏肉肠肥瘦比例应该达到3:7以上，所以比较肥腻，法国人喜欢用它跟土豆、胡萝卜一起炖是因为淀粉类食材容易吸收油脂。

不过烟熏肉肠本身带有一些酸味，可以中和这种油腻。这款烟熏肉肠的颜色比较漂亮，我看了一下制作手法是需要用混合木屑熏制24小时左右。

中超里的五香腊肠，口味偏甜，肉感有些“乌涂”，就是说吃不出来猪肉的原味。

自己做的广式腊肠,肥瘦为2:8比例，由于气候条件有限，用了室外、室内、烤箱、冰箱风干法。
