中餐里经常用猪油，“牛油”（牛的脂肪）很少用。

牛油=butter好像一直是台湾的叫法，最近才在其他华人中的语言中普遍化。我也一直认为牛油就是牛的脂肪，butter 是黄油，cream 是奶油。
