More and more Canadian friends are coming to ask me about a slew of recipes of Chinese food. To pass on our broad and profound food culture, I think it's better for me to begin practicing recipes translation.

Today's supper: Steamed Bass, Garlic Oiled Asparagus Lettuce Salad, Hot Pepper and Spiced Dried Tofu

Let me try to translate the "Steamed Bass" this time.
(友情提示:请中国人吃这道菜,带鱼头蒸是好的;请老外吃,务必把鱼头切掉。Otherwise, they'll feel frightened and hallucinate that the fish's staring at them)


【Steamed Bass】


one of the best ways of enjoying the delicate flavor of fresh bass and so easy to prepare!

Material: Bass (fresh striped bass or sea bass)

Ingredients: green onion (also commonly called "scallions"), ginger, garlic

Spices: Sweet fermented rice(甜酒酿, another name is "rice wine" if not too many rice pulps in it), a little bit aged soy sauce (老抽 Kongfu Soy Sauce 功夫酱油很不错), table salt

Cooking Directions:

1, 1 lb whole striped bass with head and tail: cleaned and scaled. (Actually this bass was already cleaned thoroughly by my friend's dad. Plus, all gills were removed.) Score the fish with cuts about 1.5 - 2 cm deep and 2 - 3 cm apart on both sides.

2, slice ginger to looney size, cut each in half and stuff it evenly in the cuts on both sides. Rub the fish inside and outside with a very very little pinch of table salt. (If you like salty meal, then don't be shy!)


3, Sweet fermented rice (or rice wine) and beer are always my favorite choices for cooking meat and fish.Drizzle the fish both sides with a small amount of rice wine, and leave it for 20-30 minutes.


4, Spread some mixed scallions and gingers evenly on the bottom of a platter. Then lay the fish on the platter.

5, Add 3-4 cups of boiling water into the steamer. Cover the steamer and heat it until this brings to a boil again and  begins "smoking". Set the platter in the top of the steamer, cover it and cook for a full 8 minutes!


6, After 8 minutes, take the fish out, sprinkle the fish with soy sause and drizzle it with finely minced garlic and scallions.


7, Heat some oil, pross. 2-3 tablespoons, in a small saucepan over medium - high heat until shimmering. Pour the hot oil over the fish and sizzle these ingredients on the top~~~~sizzling~~sizzling~~ you'll enjoy the smell a lot along with the attractive sound! You may also scatter some chopped coriander as your favor. Then, serve!

酒酿:sweet fermented rice
米酒:rice wine
姜片:sliced ginger
姜丝:julienned giner
蒜瓣:garlic cloves
蒜蓉/蒜末:minced garlic
老抽:aged soy sauce/dark soy sauce (I like the "aged soy sauce" :)
生抽:light soy sauce

 此贴严格来说不应叫“试译”,而是“学习笔记”。先是认真学习了几个老外的相关帖子,才敢尝试翻译自己的菜谱。以前每每老外朋友问及一些中国菜的做法时,都想啥说啥,实际上有时并不专业。

记得是牙防组同学还是bill同学来着,曾经提起通过“翻译日常生活”学习英语,我一直很喜欢这个方法但就是没时间。这篇学习日记是第一篇“日常生活翻译”练习。短短一篇翻译练习,收获不小,争取坚持下去!
