4 eggs
1 tsp minced fresh ginger
1/2 tsp hot pepper sauce
2 oz white vineger
1 sp light soy sauce
4 sp sugar
2 sp cooking wine
3/4 tsp corn startch
8 oz vegetable oil
Method:
1. Mix the vineger, soy sauce, sugar, cooking wine, hot pepper sauce and corn startch in a rice bowl.
2. Turn stove on to med-high, boil the vegetable oil in a pan.
3. Deep fry the eggs one by one: break the egg shell and drop it to the pan and fry it till the surface turns brown.
4. Take another wok or sauce pan, warm it on the stove at mid-high. Add 1 tsp cooking oil, then the minced ginger.
5. Slowly pour in the mixer made in step 1; and stir until 1-2 minutes after it boils.
6. Pour the sauce into the fried eggs.
7. Serve immediately.
