【吃心不改】2024年米其林三星生日餐

巴黎有家日本大厨摘到了三星荣誉的餐厅,名字叫做KEI。

小林圭是日本怀石料理厨师的儿子, 他15岁看到了ALAIN CHAPEL的记录片, 从此立志想成为一名法式大厨,2020年他终于登上了三星殿堂,成为法国史上第一位日籍三星主厨。

菜品是新派法式料理, 里面加了不少亚洲元素, 比如说味噌、芝麻、紫苏等。

这次我选了有7道菜的菜单，菜品搭配清爽吃完之后没有扶墙出的感觉。

在这次用餐中我最喜欢的是OSTRA REGAL生蚝, 经过6到8年养殖的大西洋生蚝,汁水肥厚配上鱼子酱和果冻,让舌尖体会到层次感,令味觉惊艳。

Sorbet au shiso avec liqueur de prune

Gougères au Comté avec tuiles de parmesan ; tartelettes au yaourt fumé, sardine et oignon rouge ; concombre au miso

Huître de la famille Boutret, sorbet vinaigre à l'échalote, gelée d'eau de mer, caviar gris, feuilles de bourrache

花园沙拉

Jardin de légumes croquants, mayonnaise verte, dés de saumon, émulsion citronnée, crumble d'amandes

烤得焦脆的鱼鳞香酥感十足

Bar de ligne croquant, caviar, anchois, citron, réduction de vin, sauce aux câpres

炭烤龙虾

Langoustine de casier d'Ecosse fumée, relevée au cognac, fricassée de shiitake et enoki, sauce de cacahuète, piment doux

主菜酱烧乳鸽

Pigeon de Vendée rôti et laqué au miso, confitée rôtie avec foie de pigeon en tapenade, condiment de pomme verte

山羊奶酪慕斯

Mousse de chèvre frais sur un condiment de myrtille, parsemé d'épice de Phu Quôc

神奇宝贝球

Vacherin aux agrumes, parfait au yuzu, dôme de meringue
