Can you eat beetroot leaves and stalks?

I am a former chef and the leaves are my favourite part, they are not tough nor are the poisonous, they taste like spinach the leaves and the stalk have a nice sweet taste, my mother used to cook them when we grew them or if she bought them the leaves and stalks are alot like red swiss chard, now they do need a bit of cooking, I do the separately from the roots, just steam boil or even saute with onions and butter for a side vegetable, the thing is there is not alot of them, now if you grow your own you can save them and cook up a whole load of them at once for dinner, they have as much iron and minerals as the roots themselves.

I know that you can eat the leaves. I'm not sure about the stalk, it might be a bit tough. Beet greens are like other greens such as collards, mustard and turnip greens.

You can eat the leaves, but they are a little bitter. I don't know about the stalks though.
