not very pretty solution

If you don't care too much about the look, buy a 4x2 piece of plastic coated medium density board at HD (about $4). You can ask them to cut for you to the desired depth for $1, take it home and fix to the current countertop with screws and glue. If after a number of years it gets damaged, just get another one.
