I read Pollan's books too

And saw him at a lecture when he was on a tour for "Cooked".
The section he wrote on wheat flour processing made an impression on me. The baker he profiled on making sourdough bread is a writer I admired (I bought his recipe books). And I really loved the section on Southern barbecuing. So fun to read. He is a good writer.

Now another question to you: do you make your own bread from the flour you grind yourself? Do you make your own sourdough starter? That would be amazing.
