question about 16 month old baby's yellow skin color

Dear all:

My son is almoat 16 month old. He was a premie, born at 34 week pregnance. His skin color sometimes turns to very yellow, especially on hands, feet and face. This yellow color comes on and off, not all the times. However, his eyes are not yellow at all. Other than the skin color, he is doing very well, 95% on weight and 90% on height. He's happy,eats well and sleeps well. His Dr. ( american) thinks the color is due to the foods he eats (such as carrot or sweet potatoes). But I stopped give him orange foods for a while already and I still see the yellow color back and force.

Can anyone shed some light on my concern? I'm very concerned and I want to hear other's thoughts and experiences.
