Always mirin , shacha sauce, a little soy sauce and vegetable oil. Then use a hand to rub it into the meat. Never failed good flavor and tenderness. Learned from a Taiwan TV show. Rub the meat using hand is the key here. You could use a zip lock bag while rubbing if you don't want to get fingers oily, but MUST use your hand to make it work. Don't be lazy. It pays off.
