适用慢烧或者直接在烘箱里.
cast iron的特点是热容量大(和砂锅原理相似),热到一定程度后,锅子温度比较稳定.
不过光炖肉的话,corningware的锅也很好.别人做过对比试验,没差别.
煎肉特别是牛排我觉得这是不二选择(指grill pan).炖肉也好,
