几道家常的

~肉糜茄子~

材料 ： 茄子（切长条薄片），肉糜（绞肉/香菇丁/虾仁/虾米/蘑菇/姜蓉/蒜蓉/盐/料酒/太白粉），泡椒，蒜苗。

调味料 ： 辣豆瓣酱，蚝油，酱油，麻油，料酒，高汤。

做法 ： 茄子入油里泡软，沥干铺盘底； 两大匙油烧热，放进肉糜爆至酥香，加所有调味料拌炒均匀，铺于茄片上，放进蒸笼以旺火蒸20分钟，撒上泡椒/蒜苗即可。

~韭菜猪红~

材料 ： 猪红（切粗块，和葱段/姜片一起放进滚水里烫煮5分钟，捞起沥干备用），韭菜切段，姜蓉，泡椒末。

调味料 ： （1）高汤，辣豆瓣酱，生抽，老抽，香醋，麻油，料酒，糖。（2）太白粉水。

做法 ： 两大匙油烧热，放进姜蓉/泡椒爆香，加入猪红和调味料（1）烧煮5分钟，放进韭菜拌均，用太白粉水勾芡即可。

~凉拌海带丝~

海带切细丝，放进滚水里烫煮3分钟，捞起泡近冰水，沥干铺盘底； 摆上嫩豆腐丝，泡椒； 酱油膏/姜蓉/麻油/芝麻拌均，淋于海带丝上拌均即可。

~肉糜蛋羹~

鸡蛋两个加上述肉糜两大匙打散，注入少许高汤，盐，麻油，酱油，放进蒸笼以小火蒸至凝固即可。
