田园时光：过年小零食--寸枣（江米条）

 

       过年你们吃吗？寸枣，一问好像人人都喜欢吃。

       这个视频发在YOUTUBE有一小段时间了，反响挺好。其中一条反馈说，我完全按照你的

方子，为什么炸出来的寸枣硬邦邦的。这就是新手很容易出现的问题。做之前最好认真看一

遍视频的过程，因为每个步骤都很重要。

       原理解释一下，糯米开始要低温炸，让它膨胀，然后高温定型。如果一开始就高温马上

就炸硬了。后面油温不够炸出来的寸枣会变软。

      炸硬了就没有办法了，如果回软了倒有一个办法--放入烤箱烤一下就好。有兴趣的试试
