全麦面的披萨, 意大利菜饭


以前做过的”100%全麦三明治面包”

头天晚上, 把soaker 的料拌匀, 盖上保鲜膜, 在室温过夜. 把 biga 的料拌匀, 盖上保鲜膜, 在室温过2-4个小时, 开始有气泡了, 再放进冰箱过夜.

第二天, 把biga 取出冰箱, 在室温里放1-2小时, 再跟soaker, final dough的材料一起用mixer 用paddle blade搅拌匀, 1分种, 再换dough hook搅面直到起膜 (pass the windowpane test), 大约10-15分钟.

把面团放在抹了油的盆里, 用食品朔料袋套好, 放室温里 2 小时, 面团发成两倍大,
拿出来放在洒了面粉的案板上, 分成四小团, 分别做成薄圆饼型, 再放在撒了粗玉米粉的pizza木板上, 面饼上放你喜欢的toppings,

这时把烤pizza的石板放进烤箱, 烤箱开到最高, 我的是500F, 最好要热30分钟, 再把pizza推到石板上, 烤约8-10分钟, 就好了.




做了一个香草橄榄油的,








另一个是茴香菜头, 番茄, 起司,

茴香菜头用橄榄油炒软,








剩的另一团面, 放冰箱, 第二天, 做了葱油大饼,










意大利菜饭, Risotto:

剩的炒茴香菜头, 跟三文鱼很配, 就做了菜饭,

黄油, 橄榄油炒软洋葱, 加意大利大米, 边炒拌边加热鸡汤, 米饭正好就加菠菜, 熟茴香菜头, 帕玛松起司, 盐, 胡椒.
三文鱼擦干水份, 撒盐,胡椒, 两面煎金黄.
