戚风蛋糕倒扣.

昨天按照毛毛妈的方子做戚风蛋糕, 用长烤盘, 方子中的份量加倍, 结果倒扣的时候蛋镐全部掉出来. 请问为什么毛毛妈同样的方子和用量却可以倒扣?
