Professional athletes all get their trainings and advices regarding the media. You hear lots of players in different sports say the right thing in formal interviews. However, when you always say the "right thing", especially at the moment of heat or at your high or low, you maybe actually think the right way.
Eli is probably a boring interview candidate, because he doesn't give controversial headlines. For that matter, probably the whole Giants team are boring interview candidates. Listening to Eli, after any game, or the super bowl, you can almost predict that he's going to give praise to the team, the offense, and the defense. Yes, he will give special props to outstanding individuals, but he won't throw anyone or the team under the bus. Leading by example is always easier to say than to do, but Eli does that, and every one of his teammates follows suit. They are humble and team-oriented. As Coughlin put it on the podium, "I am not about comparison", and he's just about playing better and winning. The team and the organization are focused, about winning.
I was told the Giants have very strictly rules about lots of things, like hair length, time of go to practice, what kind of bar they can drink at etc etc. You pick any interview of Giants players, you hear them saying the right thing all the time. Now, that's classy indeed.
