Only one thing to remember - if you have to eat outside, do it early. Usually oil in all fry tanks is fresh enough during lunch time, but used over and over already by dinner. Never think you are lucky when you get to a place right before it closes, because everyting has been cleaned up and noboby wants to bother making something special for you. Cooks usually just grab something convenient, make your order and then go home.
