Your wife may defend herself pro se even if the store or the police prosecutes law suit against her. The lawyer usually hesitates to give professional advice to a non-client because of the concern of professional responsibility violation. The thing is your wife has signed an acknowledgement admitting her fault, which has put her in a very disadvantaging position. Why not just wait to see the store's next move? Otherwise, you may contact the store asking about what they are going to do about it. Probably filing a civil demand is a rational step. With your wife's admission, they have better chance of winning the case. Getting more money, or putting your wife in jail, which do your prefer?
