请教龙虾吃法?

各位，龙虾头能吃吗？

我每次吃龙虾都是把头扔掉。看到头里那些绿绿和红红的东西，不知道能不能吃，偶尔试食一下，觉得味道不错，但是不明白能不能吃，害怕中毒，所以就扔掉了。但是又觉得挺可惜的。
