1. Prepare a young "all natural" chicken.
2. Seasoning it with a little bit salt, 2-3 hours or overnight.
3. Take it out from refrigerator
4. Key here: generously applying coconut milk to the whole chicken evenly. The coconut milk is the kind which is very thick, a little bit like lotion. I bought it from Chinese supermarket which is about $0.99 - $1.99.
5. Put the chicken into the oven, 375F, bake it for about 90 minutes.
6. Take out the chicken, wait until it is cool down. Tear off the meat from it to make dishes like Liang2 Ban4 Ji1 Si1. Put the remaining skeleton (Gu3 Jia4) into a pot, with some ginger , water, start to make 鸡汤
Believe me, the 鸡汤 will be very good.
Tips:
1. When you tear off the meat from chicken, don't tear off too completely.
2. You can put something else when cooking 鸡汤, like mushrooms, fish balls, etc.
The 鸡汤 may be not as good as in China, but it is good enough and much better than 鸡汤 cooked from other
ways.
