南瓜红咖哩牛,榨菜炒肉丝,炒合掌瓜苗,罗宋汤--还是家常菜

南瓜泰式红咖哩牛—

牛腱切块用开水焯过, 进高压锅,放姜片, 料酒, 水, 烧半小时, 锅冲凉水降压, 开盖取出牛肉, 牛肉只有八成烂, 留一部份做罗宋汤用. 热锅加油, 炒香洋葱一个, 加泰国红咖哩酱两大勺, 炒香, 加半罐椰奶, 熬几分钟, 放快煮烂的牛肉,切块的日本南瓜, 椰糖两大勺, 鱼露2勺, 另一半罐椰奶, 10片泰柠檬叶(kaffir lime leaves), 1杯水, 盖盖煮15 分钟,南瓜软了就好了.



榨菜炒肉丝-

里脊肉切丝,用生抽, 淀粉,酒, 味精马味, 下油锅炒断生,取出.
油锅炒香蒜末,辣椒末, 姜米, 下笋丝, 红椒, 炒几下,加榨菜, 肉丝炒, 加一点糖,味精, 胡椒,麻油, 葱段, 翻几下, 好了.



炒合掌瓜苗—再谗你们一次, 又吃到了. 这次吃完了要等明年啦.




罗宋汤—

把上面八成烂的牛腱 放一深锅里, 加洋葱, 胡罗卜, 包菜, 2罐番茄, 盐, 酒, 2勺酱油, 2勺Worcestershire sauce, 4片干草片(以前老是放香叶), 2罐鸡汤, 4杯水, 一起煮30分钟, 菜软了,洒一些 parsley 就好了. 干草放了真不一样,一股清甘味,不错. 这是一人份的,汤我不打出来,怕冷了.
