
再看一次这张照片... 右下角那个小月饼是配方1的(碱水比例正常), 可以看出来颜色略深一点. 其余的都是配方2的, 我加大了饼皮材料份量, 但是没有跟着增加碱水(一样放的是半小匙), 因为碱水比例比配方1稍低, 所以颜色上色较浅一些. 如果用golden syrup, 虽然糖浆不酸, 但是为了上色, 还是可以酌量加一点碱水,份量就可以减少些了.
