Russians and Baltics like dill. I used to live in Lativia, the locals all love dill. It grows easily in the open field without care.
Chinese uses fennel, the one with a big root like an onion. Some use the stem part for the dumplings.
There's no dill planted in China, only fennel. Dill has very thin stems and delicate leaves, fennel stem is thicker. Dill has a very light aroma, fennel has a stronger, smoky taste.
I like dill better than fennel. It's best to be used in fresh potato salad, pickled herring.
