【Fruit Cobbler】美式水果派-夏日终极享受:九寸盘里加入三斤水果,吃出了层次感。(图文+视频)

夏天到了,好吃的水果都成熟了,来一起做一道水果派吧。美国传统的 Cobbler 多用 berry 或 peach。我这里用了五种水果混合,水果鲜甜,水果上覆盖的派皮酥脆。具体用量及做法如下:

 

Fruits:

菠萝pineapple: 318 g; cut into small pieces (soak in salty water)

草莓strawberry: 388 g / 13.7 oz

Cut strawberry in half or into quarters, and refrigerate them

葡萄grapes: 391 g/13.8 oz

Half of them were cut into halves. Keep them in your fridge.

大富士苹果Fugi apple: 1, 231 g/8.1 oz with pit (209 g after removing pit)

香蕉banana: 2, 313 g/ 11.0 oz (with skin); 198 g after peel

Mix all the fruits in a big bowl.

 

Add the following and mix well

sugar: 1 tablespoon

lemon juice: 1 teaspoon

vanilla extract: 1/2 teaspoon (optional)

 

Prepare Dough:

面粉all-purpose flour: 200g (1.5 cups)

糖sugar: 30 g/2 tablespoon (save some for final sprinkling)

baking powder: 6 gram/1.25 teaspoon

Mix all the dry ingredients

加入事先回温过的、并切成小块儿的黄油,混匀。

 

Add room temperature salted butter (85 g/6 tablespoons) and mix well. 混合好后,看起来这样:

Mix wet ingredients:

牛奶milk: 72 mL/82 g 

蛋黄egg yolk: 1, large, 16 g

香草精vanilla extract: 1 teaspoon (optional)

 

Add wet ingredients to dry ingredients, mix (no kneading)

 

Add fruit to a 9-inch baking pan

 

Gently dab small pieces of dough to the top of fruit. No need to completely cover the fruits. Let the fruit and juice vent during baking.

 

将小面胚轻柔随意地摆在水果上,不需要全部盖住水果,要给水果中的水分蒸发的机会和空间。

Sprinkle sugar on top.

 

Bake at 375 F (190 摄氏度) for 40 min
