给婆婆庆生的爱尔兰菜

婆婆过生日，爸妈也来道贺。正好马上就是Saint Patrick's Day，就做爱尔兰菜给婆婆庆生吧。

啤酒燉牛肉 Irish Guinness Beef Stew

Guinness是爱尔兰人的骄傲。用醇厚的啤酒燉煮鲜嫩牛肉，就是一锅热乎乎的酒香燉牛肉。
2 pounds stewing beef，切块，season with 2 tablespoons flour and salt and pepper
2 large onions, chopped
4 garlic clove, crushed
2 tablespoons tomato puree, dissolved in 4 tablespoons water
1 1/4 cups Guinness
2 cups largely diced carrots
3 large potatoes, cubed
Sprig of fresh thyme
Chopped parsley
牛肉先油煎，加入洋葱，蒜头，tomato puree，一起炒香，再加Guinness啤酒，红萝卜和马铃薯，thyme，用电压锅压25分钟。最后洒parsley。

醉淡菜

爱尔兰盛产海鲜，最有名的就是淡菜。用爱尔兰威士忌来烹煮，酒香四溢。三磅淡菜，一扫而空。
Bacon, Shallot, Thyme, 炒香，加入一杯爱尔兰威士忌, 煮滚，下淡菜，盖上锅盖稍微焖煮两三分钟就好，千万千万不要煮过头了。洒上parsley。

柠檬奶油三文鱼

肥美的三文鱼配以柠檬香草奶油酱汁。可是我家弟弟说太酸了，要妈妈以后还是做他最喜欢的照烧酱口味。
3颗柠檬挤汁，2颗蒜头，1大勺红葱头，小红椒，oregano, rosemary各一勺, 大火炒香，加入盐巴胡椒，半条奶油一边不停地搅拌。
三文鱼400度烤15分钟，浇上柠檬奶油酱汁。

马铃薯卷心菜泥 Colcannon

爱尔兰人超爱马铃薯，这道传统菜非常美味喔。这个菜泥又可以说是菜糊糊，虽然扮相朴素，但是香喷喷相当有内秀啊。
2磅马铃薯去皮切块，煮熟（20分钟左右），加1/2杯牛奶，半条奶油，盐巴和胡椒，捣碎。
4条培根煎香，取出。余油炒香1颗洋葱碎和半颗卷心菜碎。和培根一起加入马铃薯泥，全部拌匀。最后洒上绿葱。

起司焗烤花菜

花菜加了起司酱汁，奶香浓郁，很得小朋友的欢喜。
花菜烫半熟。另外取小锅，2大勺奶油，3大勺面粉，一杯牛奶，一起小火搅拌，直到粘稠，加入两杯sharp cheddar碎。全部浇在花菜上，烤375度25分钟。

爱尔兰苏打面包

从实招来，买的啦。

高升蛋糕 Irish Creme Chocolate Trifle
我还真的不知道Trifle要怎么翻译，反正是层层叠叠往上堆，就叫它高升蛋糕吧。这个甜点差不多是小朋友独力完成的喔，我家弟弟居然学会了自己打发奶油。

1 package devil's food cake mix (regular size)
1 cup refrigerated Irish creme nondairy creamer
3-1/2 cups cold milk
2 packages (3.9 ounces each) instant chocolate pudding mix
3 cups whipped topping
12 mint Andes candies, chopped
Directions
Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. baking pan. Cool on a wire rack for 1 hour.
Poke holes in cake about 2 in. apart. Slowly pour creamer over cake; refrigerate for 1 hour.
In a large bowl, whisk the milk and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set.
Cut cake into 1-1/2-in. cubes; place a third of the cubes in a 3-qt. glass bowl.
Top with a third of the pudding, whipped topping and candies; repeat layers twice. Store in the refrigerator.
