军人后代的幸福滋味(3):自制酸面包和Panini三明治

(一)酸面包(Sourdough)



孩子们很喜欢酸面包。酸面包微酸,口感独特,是早餐配果酱,自制三明治的上好选择。它的制作类似中国的老面馒头,只是不用苏打中和。我尝试了很多酸面包的方子,下面这个是目前为止我认为最好吃的配方,只要严格按照她的方法来做,几乎没有失败。这里是链接: http://thestonesoup.com/blog/2010/10/rustic-sourdough-the-secret-to-making-amazing-bread-at-home-5-ingredients-simple-baking/

(二)Panini Sandwiches


孩子们爱吃Panini Sandwiches,圣诞节时从Macy’s买了一个Panini maker,只要18刀,足够每天早晨给孩子准备Panini Sandwiches了。看图:



                       


因为常吃Ham 对身体不好,口感也不怎么样,所以我给孩子们制作Panini Sandwiches的材料都用新鲜食材,鸡肉、猪肉、苹果等等。这是我最常做的三样Panini Sandwiches,配方都来自网络。

1.Chicken Salad Panini Sandwiches

INGREDIENTS
•1/3 cup Marzetti® Original Slaw Dressing •For the salad
•1 tsp. salt
•1/2 tsp. black pepper
•3 cups cooked chopped chicken meat
•1/4 cup chopped scallions
•10 sun-dried tomatoes cut into julienne pieces
•For the Sandwiches •8 slices sour dough or peasant bread
•8 large fresh basil leaves or small handful of fresh spinach
•4 slices favorite cheese
•1 small red onion sliced thin, optional •Butter
 
PREPARATION

For salad, whisk together Marzetti Original Slaw Dressing, salt and pepper in a mixing bowl; add chicken, scallions and sun-dried tomatoes and toss to coat. To assemble sandwiches, preheat panini press or grill pan to medium heat. Divide chicken mixture and spread onto 4 slices of bread. Top with basil leaves, cheese and optional onion and remaining bread. Lightly butter one side of sandwich and place that side down onto heated panini pan, lightly butter topside of sandwich. Cook for 6 to 8 minutes, turning once or until bread is golden brown and cheese is melted. Repeat process with each sandwich. Serve sandwiches with Marzetti Famous Cole Slaw.




                

2.Grilled Apple, Cheddar and Red Onion Paninis

INGREDIENTS
6 tablespoons Girard's® Champagne Dressing
¼ cup Dijon mustard
6 individual rectangular Italian rolls
2 Granny Smith apples, very thinly sliced into discs (should yield 24-36 total discs)
12 oz. extra-sharp cheddar cheese, cut into ¼-inch thick slices
1 red onion, sliced into thin rings

PREPARATION
 
Preheat a panini press or grill pan. Spread the bottom half of each roll with 1 tablespoon Girard’s Champagne Dressing, and each top with about 2 teaspoons Dijon mustard. Layer each sandwich with 4-6 apple slices, 3 slices of cheese and some onion rings. Close sandwiches and grill, weighting down tops with a cast-iron skillet or panini weight, until cheese is melted and bread is toasted. Repeat with remaining rolls. Makes 6 sandwiches. Serve immediately .
         


                  



3.Marzetti Buffalo Blue Cheese Chicken Panini

INGREDIENTS
1/2 cup Marzetti® Chunky Blue Cheese Dressing
1/3 cup all-purpose flour
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon salt
1 1/2 pounds chicken breast-thin cut, about 8 slices
2 tablespoons olive oil, plus extra for grilling bread
3 tablespoons hot sauce
1 tablespoon butter,
melted 8 slices (medium thickness) favorite bread Slicedred onion

PREPARATION
In a shallow bowl combine flour, paprika, chili powder and salt. Coat chicken with flour mixture. Heat oil in a large nonstick pan over medium-high heat and cook chicken on each side until it is fully cooked, about 10 minutes. Remove from pan. In a small bowl, combine hot sauce and butter. Brush each piece of chicken with hot sauce mixture. Allow chicken to cool slightly. Preheat a sandwich grill or panini press. Arrange bread slices on a work surface and spread each slice with 1 tablespoon Marzetti® Chunky Blue Cheese Dressing. Layer cooked chicken and onions on four slices. Cover chicken with remaining four slices of bread, dressing side down. Brush top and bottom of bread with olive oil and place panini in grill or press and cover. Cook until bread is toasted, about 3 to 5 minutes. Remove from grill and cut each sandwich in half. Serve sandwiches and celery sticks with extra Marzetti® Chunky Blue Cheese Dressing
