白灼蛏子

蛏子泡清水四小时，吐尽泥沙。半锅水加姜片，葱段，料酒烧开，放进蛏子烫至开口，捞起取肉，撕去膜，放回壳里摆盘；饭碗里放进蒜蓉，姜蓉，辣椒末，葱花，淋进三大匙滚油，加少许酱油，味精，清水调均，淋于蛏子上即可。
