我们家三口只有我一个人喜欢吃鸡胗,所以平时很少做。趁空巢在家,做过好几次。上周五中午下班回家就给自己炒了一大盘,配了点米饭,再加半杯红酒,一顿就吃完了,好过瘾哈:)

我的做法很简单:鸡胗先用一大勺盐抓洗干净(用多量的盐洗可以去除异味)。每个鸡胗在肉厚的地方打花刀,然后切成两到三块。最好用厨纸把水分吸干,热锅冷 油晃均匀再下鸡胗和姜丝。大火快炒几下,变色后下料酒,再点几滴醋(不能多),加点酱油糖等调料翻炒(我还加了点孜然粉:)。这时候会出水,盖上盖子转中 火焖3-5分钟,收汁后下事先炒过或烫过的配菜(我喜欢用比较辣的尖椒和木耳),再最后调下味道就可以出锅了:

这样爆炒,火候有些讲究,否则成品绵软不脆,牙口要好才嚼得动哦:)
如果掌握不好火候,可以酌情加点开水多焖一些时间。口味和配菜都可以按自己的喜好选择。
印象里,想当然的鸡胗跟猪蹄差不多,应该是减肥大忌吧~~~然而薄荷网上查了一下,100克的青椒炒鸡胗,热量才117大卡!
俺每年的验血报告胆固醇等指标都很正常(经常锻炼的功劳:),既然热量不高,那就再来几盘吧(第一盘是减肥期间做的:)

有个朋友问起虎皮辣椒,这个也是我最常做的菜之一。我喜欢这种肉质比较厚实的红黄椒来做。这种椒一点都不辣,做法非常简单~~~以前是炒锅少放点油,先把去掉籽的红椒干煸出‘虎皮’:

然后另起油锅爆香葱姜蒜末,倒入煸好的辣椒,再根据自己的口味放调料~~~红烧或糖醋都可以,我还喜欢放一个切碎的西红柿:

减肥做记录的时候发现,炒菜油的热量最高了,于是做什么菜都琢磨如何减少用油量。想起我们老家用烧的:)

为了避免青椒受热后水份流失,就带蒂烧,洗干净就行了,吃的时候再去掉。烧好后回锅按自己喜欢的口味烧一下就成了:

这盘是糖醋口味的,带饭很合适~~~就是热饭时老美同事会闻香而至,询问是什么美味?所以我常常会另外装在一个小盒里凉吃:)

五月中旬买了这个测脂肪率的小仪器,当时的记录是32.5(我这个年龄的女性,24 - 33.9 属正常)~~~说明这两个月俺的体重仍然保持稳定,脂肪有所减少,肌肉增多。准备继续努力,看看脂肪能不能降到28左右!降不下来也不勉强,目前的状态俺觉得已经很不错啦:)
