Carrot cake

2 cup flour

2 tsp baking soda

2 tsp cinnamon

1 tsp salt

2 cup sugar

4 eggs

1 cup canola oil

4 cup grated carrots

Optional: ¾ cup raisings

Optional: ¾ chopped nuts

 

Combine all ingredients

Mix well.

Bake at 350 degrees

9x 13 pan 40 minutes

Cupcakes 20-30 minutes, until toothpick comes out clean

 

Cream cheese frosting

Mix 8 ounces soft cream cheese and one stick soft butter; add 4 cups powdered sugar.
