1.頭尾相連處下刀或扭斷.
2.被斬首後的龍蝦身軀(尾)會收縮彎曲,將它按平背部朝上,將刀尖置於龍蝦前對著它的中線,先將它壓緊不會滑動了,再以軋的方式向下一按龍蝦即從中間分成兩半,清理腸線後就可以再切成小段了.
3.斬下鉗腳,拍裂,掀掉頭蓋清除鰓瓣,切成四塊.
