素食好主意 -- 绿豆丁土豆 （Aloo Mangodi）

印度的拉贾斯坦邦 （Rajasthan）是西北方靠近沙漠的一个邦，气候干燥少雨，所以人们都有干燥食品的习惯。

绿豆丁（Mangodi）是把绿豆瓣泡水加上香料和调味料磨成糊状，然后选一个艳阳天把豆糊弄成颗粒，摆在大太阳底下晒干成豆干状，脱水晒干的豆丁可以收藏好久。是蔬菜缺乏的季节时一个很好的食材。

材料：

1/2 杯 绿豆丁 （Mangodi）

1 只 中型 土豆

1 只 中型 番茄

1 片 桂叶

2 只 青辣椒

2-3 根 辣椒干

1 把 香菜 切碎

 

调味：

1/2 tsp 辣椒粉

1/2 tsp 姜黄/黄姜粉 （Turmeric）

1/2 tsp 芫荽粉 （Coriander Powder）

2/3 tsp 盐

 

部分材料：

把土豆切丁泡水，绿豆丁在一口锅里用一点油煸煸香。

把番茄和青辣椒搅拌成糊状。

现在锅里加一大匙油，把桂皮和番茄糊煸干，然后加入所有调味品翻匀，加入辣椒干。

加入一杯水煮滚，然后加入绿豆丁和土豆，把土豆丁煮熟变软。就好了。

吃的时候加入切碎的香菜就好了。
