I'm sorry I misunderstood. I'm sorry I should've paid more attention to that. I'm sorry I made you feel that way. I'm sorry I can't finish that by tomorrow. I'm sorry I interrupted you. I'm sorry I didn't make that clear. I'm sorry for(anything that I could or couldn't  do to make your life better)
Saying I'm sorry doesn't necessary mean you are wrong, it's just an polite way to talk with people and ask for forgiveness if there was some inconvenience caused by you. It's saying I didn't mean to cause that.

when it comes to real issues,  you need to speak up firmly. But I'm sorry still can be used here and there. My boss says sorry and thank you a lot.
