大专毕业的会计,一般起薪有2.5万美元/每年. Even the most entry level bookkeeper, or AP/AR cleark can make more than that, with or without accounting degree. But English communication skill is the key to land a job, unless you find a Chinese company.

I think you could be a little more aggressive. Otherwise, the return of investment on tuition and time would be tooooo low.

Since 家里收入主要不靠你, and if your kids are old enough for daycare or school, a Master Degree might be better than Associate Degree. It brings you more opportunities.
