I think people will understand you.
When more than one offers come anyone will pick up the better one.
But sometimes people just don't know whether more offers could come when they get the first offer. So it happens that one person has accepted the first offer while the second offer (the better one) arrives.
If you really like the second offer and want to withdraw the acceptance to the first offer you'd better inform them and tell them the truth ASAP.
Don't worry about it, it should be ok.
I can tell you a real story.
One person (Mr. X) worked in a company for many years and one day his friend told him a better job and finally he got the job. At the time he presented the resignation letter to his boss the boss wanted to keep him since Mr. X did a good job in the company by offering him a couple of options. However the boss failed and the person left.
The story has not ended yet.
After working in the new company for a few months Mr.X felt that he didn't like the new company's culture, he was unhappy working there. Then he wrote a letter to his ex-boss telling him that he would like to come back but didn't give any details. Guess what happend next? Mr. X got the reply from his ex-boss shortly - welcome back!
You may think it is impossible in China. But now you are in North American, it is normal and it is possible!!!
Things are not as compilcated as we thought.
So do what you want to do as long as it is resonable.
