I use braided stainless steel hoses for refeg in my home, which secures burst free. Applied that to cars,
1) I am not sure you can buy a brake line with braided stainless steel, where did you see it?
2) The brake line is high presure and heat resistance line, I do not think you can make it yourself. There is a federal law specifying what kind of license is required for a shop to make it;
3) Brake reliability is life critical thing, do not mess with it if you are 100% sure what you are doing;
4) If you really want to do it, make sure bleed the lines aftermath.
Good luck
It's theoratically doable but

You don't want to replace SS lines in your case.

Your brake sponge-like feeling isn't caused by the hose
