It's ok to use it again for couple more times until color changes. Put in a mason jar tightly and sit in dark place.
I use this one for deep frying, just occasionally but it works well. It's also a boiler and steamer so I use it
to cook pasta more often. It doesn't need too much oil for frying pork chops, one cup oil at most.
I used it to fry some large dumplings also.
