Double oven. Top layer 400 degrees. Pastry dough placed at bottom layer.
Turn off the top oven when it reaches 400, then wait.
The dough at bottom will rise much faster and fuller.
But for dough freshly taken out of fridge, it may take hours to reach 80% of the loaf pan.
Just be patient, it'll get there eventually.
