500 gram flour to 235 ml water is good.
Or just add one egg and 1/4 cup water to 1.5 cup flour.
Hand knead noodles need softer dough to stretch out. It's not the harder the dough the better.
My noodle machine does a good job making the noodle sheet. It never sticks together.
But the dough has to be moisture and stretchable. Too hard dough breaks into pieces.

The dough is definitely not hard to being with, buckets of water is added in.
But the noodles are still chewy and tasty.
Don't buy that mixer if you just want to make some noodles.
