Peach Cream Cheesecake Bar 外加烘烤的一些基本方法

感谢毛毛妈转来的这个方子。真是好吃,味道清淡,口感绵软。

我在做的过程中, 发现用料中没有香草,就自己加上。 后来我在网上查了这个甜点,有些是要香草的。  黄油我只用了3/4 杯。加了一点糖。
不好意思我改写了方子, 写成英文是为了可以给孩子看得更明白, 而且原料都是英文,也为了让初学烘烤的爱好者不再疑惑中文配料的英文名称。

原方中把烤箱预热放在第4步,有点太晚。预热应该是第一步。然后准备烤盘。
方法是, 用蜡纸粘着黄油抹在盘子底部和侧面,撒上面粉,再盘子背面轻轻敲,直到完全盖满。把烤盘倒扣,多余的就可以掉出来。这个步骤要在 水池上空完成。要不然面粉会飞得到处。桃子也要事先切好。打发蛋白, 把容器倒过来,蛋白不往下掉,打蛋器提起,有一个弯弯的软尖儿soft peak, 那时候就好了。 记住,蛋要冷,糖 可以一次加入,因为量少。量大的时候要分批加。

For the base:  

All purpose flour: 2.75 cup

Sugar: ½ cup

Baking Powder: 2t

Butter: 16T cut in to coarse crumbs, keep in fridge until use

Egg Yolk: 4

For the filling:

Cream Cheese: 2 packs, softened

Sugar: ½ cup  

Egg: 1 yolk and 1 whole egg

Vanilla: 2t

Peach: 8 peaches (cook before if using fresh peach, otherwise canned) sliced

Egg White: 5

Cream of Tartar: ½ t +Sugar: 2/3 cup

 

Steps:

1. 
  Preheat the oven at 350. Prepare pan. Slice the peaches, 1 peach=8slices. 

 2. 
    To make the base: Cut  butter, mix the flour, and 3T sugar, and 5 eggs yolk until mixture resembles coarse crumbs. Press 2/3 of the crumble dough onto the 9x13 prepared pan. Keep 1/3 to use as topping later.

3.
     To make the filling: cream the cream cheese, sugar and eggs. High speed for 2/3 minutes. Add vanila. Pour over the base layer.Spread the peach slices evenly on the cheese filling.

   Beat the egg white with cream of tartar and sugar, high speed for about 3-5 minutes until soft peak appears. Then spread the egg white onto the peach evenly. Make sure the egg white fill up the gap between the peaches. Otherwise the egg white will be baked to thin layer. This egg white layer should be moist and taste like marshmallow.  That’s why 8 peaches not 4 peaches being used in this recipe: to lcreate some room for the egg white in between the fruit. Otherwise all egg white can be baked to a thin layer. Top with the flour butter crumb.

5.  B
ake about 45 minutes until the topping looks golden, not brown. Put the pan on cooling rack until cool completely. Once the egg white settles down, cut into 18 cubes and serve. Can make in advance, cool in the fridge and then cut.

 

·         The peach can be replaced by apricot, or pear.
