昨天礼拜六突然特别想吃桃酥。于是来到私房搜索,跟桃酥有关的帖子很多,看到有宫廷桃酥,果仁桃酥等等,有问和回答桃酥为什么发硬的,虽然有的同学的桃酥看着卖相很好,可是都不是我印象里的家乡的桃酥样子。我上初中的时候村里的糕点厂开始帮人们做桃酥,需要自己提供多少的花生油,多少的白糖,还有面粉。什么苏打之类的东西是没有的。后来看到爱川同学的超级懒人桃酥一帖,ta提到ta就是把买来的Sandies Pecan Shortbread再烤一烤,结果味道很好。一下子提醒了我。我也很爱吃Sandies Pecan Shortbread的。何不看看那个是怎么做的呢?
结果就在网上找到这个方子:
Pecan Shortbreads:
1 cup (100 grams) pecans, toasted and coarsely chopped
2 cups (260 grams) all purpose flour
1/4 teaspoon salt
1 cup (226 grams) unsalted butter, room temperature
2/3 cup (145 grams) light brown sugar
1 teaspoon (5 grams) pure vanilla extract
To Toast Pecans: Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Bake the nuts 8-10 minutes or until browned and fragrant. Cool on wire rack and then coarsely chop.
In a medium sized bowl place the flour and salt and whisk to combine.
In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until light and fluffy (2-3 minutes). Beat in the vanilla extract. Scrape down the sides of the bowl and then add the flour mixture, mixing only until incorporated. Stir in the chopped pecans.
Divide the dough in half and wrap each half in plastic wrap and refrigerate until firm (at least one hour).
Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.
Remove one half of the dough from the refrigerator and, on a lightly floured surface, roll into a 1/4 inch (.5 cm) thick circle. Then, with a lightly floured cookie cutter cut out rounds or stars. Place the cookies on the prepared baking sheets and refrigerate for 10 minutes to firm up the cookie dough. Roll and cut out the remaining cookies.
Bake for approximately 13-15 minutes or until the shortbreads are a deep brown color. This ensures a crunchy and crumbly cookie. (Note: If you only bake the shortbread until they are light brown the shortbread will be softer in texture.) Remove cookies from oven and cool on a wire rack.
没有用苏打之类的东西,跟我印象中的很像,虽然家乡的桃酥也并没有用pecan,但是我家里正好有我给老公做pecan pie剩下的pecan。所以决定照这个做。不过,我做了一些替换:1. 家里没有all purpose flour(就是中筋面粉),只有高筋面粉,因为要搬家,没有的东西也不去买了,将就着吧;
2. 这个方子用butter,被我替换成一杯花生油。
3.我家里也没有light brown sugar,于是用半杯白糖和半杯dark brown sugar 代替。有人说这个dark brown sugar 就是我们国内说的红糖。你别笑俺,我当然知道白加dark brown 不等于light brown,不过是一边想着健康,一边想着家乡。你如果想试验,可以用随便那一种糖的。
4.方子里把面调和之后,放到冰箱里放至少一个小时,我因为开始做的时候太晚了,就把dough 放进冰箱过夜了。然后今天早晨起来很早,就在去教会之前做了。我做的时候突然想到这个问题,看到有同学提问为什么她的桃酥不成型,我想如果你用butter,那么放进冰箱这么一冷,是不是就起一个凝固的作用啊?
pecan比核桃贵一些,我想你完全可以用核桃替换的。也同样好吃和营养。
那你问,那儿可以看出来是浪漫的桃酥啊?嘿嘿,图片来了,老公和我名字都是J打头,所以我用cookie cutter 切了几个出来。心当然就代表“爱”了。cookie cutter是逛garage sale买来的,很实用。看照片之前提示,不要盯着我家的cookie sheet看,朋友给的,很旧了,每次都要点着锡箔纸。5周年纪念日就在9月份,不知道老公会不会想到给我买新的?
后来发现这个J很麻烦,嘿嘿,人家是心灵手巧,我人比较懒,所以叫自己是心灵手拙,就只切心型了,再来一张照片
那另外一半料我就打算实验做圆形的桃酥,没有这样的cutter,灵机一动,用了一个peanut butter 的盖子。想做桃酥或者饼干的同学可以用家里大大小小的各种盖子哈。
看一下过程。这个dough是很软的,非常好压扁和重新整形的
那你要问了,到底做出来怎么样啊,好吃不好吃啊?硬吗?是不是一碰就散啊?回答是味道还可以,稍微有一点点油,不硬,很酥的,但是也可以拿起来,。有照片为证,
最后,顺便赞一下老公去年圣诞送我的小礼物之一,用来粉碎核桃啊之类的坚果或者herb好用极了。放进去推几下就好。更重要的是,可以放进洗碗机里洗。很和我这个懒人的心意。
