昨天的晚饭 – 西芹拌海蛰, 椒盐沙丁鱼, 腰果辣味鸡,
这个长周末比较认真的做了一顿晚餐, 其他的伙食都是在外面混吃的, 甚至还开了远途, 很久没有这种吃劲了.
西芹拌海蛰
海蛰用冷水泡3-4小时,中间要换水4-5次, 用不到沸点的热水泡一下, 大约是10秒钟不到,取出再冷水泡半小时就可沥干凉拌啦.
西芹, 红椒切夌型也用盐开水汆过, 再过冷水,
用了麻油, 盐, 味精, 寿司米醋, 白胡椒, 拌匀, 进冰箱半小时后食用最佳.

椒盐沙丁鱼
沙丁鱼清洗干净, 擦干, 用酒, 盐, 糖, 味精, 白胡椒腌半小时入味, 取出, 拍上太白粉,进油锅炸酥,
炒锅用点黄油炒香, 葱, 姜, 蒜, 青红辣椒末, 加椒盐粉, 炸过的沙丁鱼拌匀.

腰果辣味鸡
鸡腿肉切小块, 用酒, 盐, 糖, 味精, 白胡椒, 太白粉腌半小时入味, 进炒锅用点油炒干水份, 炒断生, 取出,
腰果, Trader Joe’s 买的烤熟的腰果再用油炒一下香,备用.
炒锅用油炒香 红干辣椒, 加红葱头碎, 姜蒜碎, 泡椒, 青辣椒片, 炒香, 加西芹, 红椒, 加鸡肉, 炒拌匀, 喷韶酒, 加耗油, 再炒几下, 加腰果,拌匀出锅.
