I am not a fan of monkfish as I don't like its texture.
But it's ok for stew.

Conch is one of my favourites.
It can be sliced and then stir-fried with Chinese chive flower; 韭菜花/韭黄炒螺片
It can be used in salad.
The edges can be used to make a good soup. (眉肉螺头汤)
