Maybe taking a class but not another degree.

Maybe take a class just to know the professor and see how you are doing compare to his/her teaching? With your background, and if your English is good, you should be able to find non-faculty track teaching job in economics. Have to keep trying.
Or you can try to find a job in a company. A lot of analyst job need people of economics background.
